We just learned about some new technologies that are advancing food science and expanding our options. Now, let's explore the technology behind different foods in more depth.

STEP 1

 

TRADITIONAL

1. Watch the process behind making traditional chicken products in this video. Write down 3 main findings about how this industry produces products, using both the images you see and what the speakers are saying.

STEP 2

 

PLANT-BASED

2. Read about and watch the process behind making realistic plant-based foods from these two companies (see article and video below). Write down 3 main findings about how these new food technologies work, using both the images you see and what the authors/speakers are saying.

CELL-BASED

3. Read about the process behind making animal products without animals from these two cell-based/cultivated meat companies (see 2 articles below). Write down 3 main findings about how these new food technologies work, using both the images you see and what the authors are saying.

COMPARE

4. Compare and contrast the processes behind making traditional animal products, plant-based alternatives, and cell-based/cultivated meat products, focusing on the following:

  • Types of equipment used

  • Length of time for production

  • Amount of steps for production

  • Number of locations used for production

  • Cleanliness of production environment/food safety
