Educated Choices Program Shows Food Curriculum at the 2025 American Association of Consumer and Family Sciences Conference

This June, the Educated Choices Program (ECP) participated in the American Association of Family and Consumer Sciences (AAFCS) Conference in Kansas City, Missouri. Representing ECP was Customer Relations Manager Gerard Martinez, who connected with family and consumer sciences educators whose teaching areas, such as health, environmental science, and nutrition, are a natural fit for ECP’s curriculum.


Tables with laptops and brochures are set up at an educational event. Banners promote free food impact education, highlighting health and environment.

Some of our most popular food and science education packages were shared, providing ready-to-use materials for middle and high school students, including:

“The Future of Consumers:” A Talk About Healthy Food Choices

Martinez delivered a 15-minute “Fast Talk” titled The Future of Consumers, where he discussed how educational interventions can encourage students to try healthier foods.


Key points included:

  • Health risks associated with the Standard Western diet, including type 2 diabetes and cardiovascular disease

  • Health benefits associated with whole plant-based foods

  • Educated Choices Program’s impact data, showing increased fruit, vegetable, and plant-based meal consumption after engaging with the food education curriculum. 



The talk also offered actionable strategies for educators, such as taste education, cooking classes, and school gardens, intended to inspire student-led change.

One of the biggest points of engagement at the ECP booth was once again our We Are Teachers reviews! Conference goers were excited to see how their peers already use ECP's free educational tools in the classroom to spark discussions about food systems, nutrition, and sustainability.
